College Diploma in Baking and Pastry Arts Management

Humber’s Baking and Pastry Arts Management two-year diploma program will prepare you for a dynamic career in the hospitality industry. Learn how to create impressive and delicious baked goods and confections in our state-of-the-art labs, such as:

  • chocolate sculptures
  • decorative cakes
  • tarts and pastries
  • plated desserts
  • artisanal breads and breakfast pastries
  • petit fours
  • ice creams, gelatos and sorbets
  • blown, pulled and cast sugar pieces
  • large quantity production

During the first year of the program, you will learn the fundamentals of baking and pastry and develop valuable skills, creating baking and pastry delicacies that are both delicious and professional.  During your second year, you will learn the more complex and artistic elements of the trade including confectionery arts and chocolate work - both traditional and contemporary techniques. Throughout both years, you will learn about safety and sanitation, time management and organization, professionalism, and teamwork. In every course, you will learn about the opportunities within this specialized field, including international trends and innovative applications.

This program will also give you in-depth knowledge about bakery management and entrepreneurship, career readiness, computers and technology in the hospitality industry, as well as general education and communications courses.
